Tasting Notes: The ripe grapes are picked on fruit and flower days, whenever possible, only by women to maintain their fertile energy. All viticulture is geared towards producing a peaceful, symbiotic balance between all living entities. Vinification takes place in a combination of amphoras and enameled tanks to preserve the juice as good as possible. Only indigenous yeasts are used for fermentation and malolactic fermentation occurs naturally. No Sulphur is added. The wines are disgorged 22 months after harvest.
The sulfur-free cuvée Blanc de Blancs from Champagne Augustin - Cuvée 116 Blanc de Blancs: The number 16 represents sulfur on the periodic table of the elements is conspicuous by its absence, without (one hundred) sulfur. It is a beautifully found play of words in French.
