Tasting Notes: The ripe grapes are picked on fruit and flower days, whenever possible, only by women to maintain their fertile energy. All viticulture is geared towards producing a peaceful, symbiotic balance between all living entities. Vinification takes place in a combination of amphoras and enameled tanks to preserve the juice as good as possible. Only indigenous yeasts are used for fermentation and malolactic fermentation occurs naturally. Minimal or no Sulphur is added. The wines are disgorged 22 months after harvest. Tasting Note: A rich and velvety champagne with a long, soft finish; hints of honey and caramel. The symbolic relationship between fire (Le Feu) and cuvee 301: Fire is hot, radiant, expansive and unpredictable. It is the transforming element through its heat and is versatile depending upon it’s intensity. Flamboyant cuvee, harmonious and uplifting.
