O Faya Farm: A Holistic Agricultural Haven
Nestled in the hills of Saxon, Ilona Thétaz manages O Faya Farm with a thoughtful and holistic approach to agriculture. Living on the farm with her Family, chickens, horses, donkeys, cats, dogs, and many sheep, Ilona creates a vibrant and diverse ecosystem. The name "Faya" comes from the old Patois of the French-speaking Valais and means "sheep," highlighting their central role in farm life.

Sustainable and Biodynamic Practices
The sheep, carefully selected ProSpecieRara breeds, are integral to the farm. They manage the greenery in the apricot orchard and vineyards, produce organic fertilizer, and promote biodiversity. Since 2021, O Faya Farm has been certified according to Bio Suisse guidelines, reflecting Ilona's commitment to sustainable farming. The grapes for the wines were initially sourced from friends, but recent vintages are grown in her own vineyard. The wines are unfiltered and, whenever possible, made without added sulfur.

A Diverse Harvest
In addition to wine, Ilona cultivates apricots, which are abundant in good years. She personally delivers these apricots across Switzerland.
