Tasting Notes: Golden color, almost amber. Distinct smoky and dried fruit hints, apricot, fig and dates with a hint of almond. Savory and fresh in the mouth, with an almost oily fullness and a salty finish.
Tasting Notes: The perfect wine for lazy weekend afternoons. Franz & Christine wanted to make a “house wine” that involved all different vineyards and varieties that they farm. This includes the recently (2015) planted hybrid, disease resistant varieties such as Muscaris, Souvignier Gris, Bronner and a Swiss clone of Cabernet. Catsilver refers to the shining silica stones that are found throughout their vineyards. All the white grapes undergo a maceration on the skins and the red grapes are directly pressed, before all being aged in used oak barrels for eight months.
Tasting Notes: Needs time to breathe as it is quite reductive, then it shows notes of citrus, apricot, cut grass, petrichor and a touch of butter. On the palate it is full of energy, with a zingy acidity and strong minerality, balanced out by a light creaminess.
Tasting Notes: Lobster pink with beautiful opalescence. Yeast deposit clearly visible at the bottom of the bottle. The nose opens with hints of yeast and bakery and then opens up to fruity aromas of cherry, wild strawberries, white currants and rose petals, and closes with a mineral note. The taste is dry with a very delicate but persistent bubble, fresh and savoury with good persistence.
Tasting Notes: Rosé; fine and persistent froth. The nose is expressed with hints of apricot, raspberry and apple and notes of pastry and yeast. On the palate it is crisp, pleasingly sapid and well balanced.
