Tasting Notes: This Champagne Brut Ullens is the first Cuvee produced by Domaine de Marzilly which consists of a blend of 56% Meunier, 37% Chardonnay and 7% Pinot Noir. The base harvest from the year 2015 and with 42% of 'vin de reserve'. The vinification takes place exclusively in oak barrels during 36 months on its own yeasts.
With the dosage of 4gr. /l. this champagne is an extra brut. On the nose this champagne has floral hints which evolve into yellow fruit in the glass. On the palate it is bright, exciting and complex.

Tasting Notes: This wine is a Nebbiolo rose’ pet nat. The nebbiolo grapes are destemmed and crushed after harvest, it sits on skins 12/18 hours, which gives it the rose colour. Then the juice is spontaneously and slowly fermented , no additions made. Once dry, meaning all the sugars have been transformed in to alcohol and carbon dioxide (6/8 weeks), is racked and moved outdoor to avoid malolactic fermentation, no sulfates are added. Kept on fine lees until spring time and than racked before the sur tirage, made with must that has been frozen at vintage.
This is a versatile rose', that works pretty well as an aperitif but also matches great with food, especially in spring and summer. Fresh and zippy but with a pleasant weight to the palate and some tannins, it shows floral/fruity characters and some funky notes. This is a super fun and pure wine that you will not find in many places.

Tasting Notes: The grapes are partially de-stemmed and placed in 50 hl cement tanks, where they remain for less than 24 hours. It is immediately drawn off, pressed and then transferred to a 35hl stainless steel tank. Here it carries out part of the spontaneous fermentation in contact with the skins, without temperature control. 2-3 punch downs per day are carried out as needed. A small part of the must is preserved before fermentation, it will be used to restart the fermentation inside the bottle, thus obtaining a natural sparkling wine.
The wine is bottled in the spring in a waning moon and aged 6 months in bottle They do not carry out any clarification and filtration or addition of sulfur dioxide.
