This is done in the methode ancestrale style, a single fermentation that is finished in the bottle for a natural sparkle. No filtering or fining, no sulfites added.

Tasting Notes: Limpid, light ruby red colour, with the presence of small sediments due to the absence of filtration. Fairly consistent in the glass, with discreet softness. The nose is pretty intense and with a pleasing complexity. Aromas of cherry schnapps, acetone, poison ivy, earth, white pepper and some tobacco. In the mouth it is moderately dry, with a nice alcoholic note and fresh tannins.
Tasting Notes: 100% Schiava, half semi-carbonic maceration in amphora (grapes destemmed berry by berry by hand), half direct pressing. Native to Trentino, Schiava (also called Trollberg) grows on steep vineyards in the Valle di Cembra. A dark rosé, very light, extremely glou glou.
Tasting Notes: Semi-carbonic maceration of 1 month, ageing in 10 year old barrels for one month. The nose is frank with aromas of yellow fruits, spices and a light touch of fir buds. In mouth, the attack is on the freshness followed by supple tannins (orange wine), a touch of bitterness with to finish a fruity and fresh sensation.
Tasting Notes: Note di Grillo is a white wine produced with Grillo grapes in purity, from vineyards located on clay soils at 220 meters above sea level. Harvested in the first ten days of September, Fermentation without temperature control in stainless steel tanks. Maturing for 6 months in stainless steel tanks on lees. The nose is fine with notes of flowers, citrus and yellow fruits. In the mouth is tense, fresh and mineral.
Tasting Notes: Direct press into fibreglass. Transferred to bottle prior to ferment completing. Left on the lees for 6 months, then disgorged. Zero SO2. Very delicate. Very light and fluffy, tiny bubbles. Quite playful in the mouth, buzzing with energy. Cotton candy sensation, but not sweet. Light, delicate, then the fruit plushes out a bit. Perfect for Spring and Summer!
Tasting Notes: Their Pét-Nat Rosé is a blend of mostly Pinot Noir, with about 10% old-vine Portugieser (vine age is about 40 years-old). A pleasing, deep magenta, jewel-toned rose in color, with a sprightly mousse and a mélange of tart and juicy red fruits: raspberry, watermelon, sour cherry, red plum all burst forth and wash over the palate, and the bright acidity primes you for the next sip--incredibly thirst-quenching!

Tasting Notes: Ancarani's Indigeno is a very lively, expressive, energetic and above all saline sparkling wine made by refermentation in the bottle without disgorgement. It has a rustic, country personality reminiscent of grape juice, wild herbs and fermentation yeast. It gives a lively, immediate and very refreshing sip.
Tasting Notes: 80% of the mass is spontaneously fermented in stainless steel and cement tanks and 20% in used tonneau with skins and stems. Refinement takes place in the same containers until spring. Pranzegg's Tonsur is a fresh, agile and easy drinking white wine. Taut and lively, in the mouth it combines its little softness with freshness, minerality and a veiled aromatic nuance. A wine that makes you feel in a hurry to drink it, for its crisp and very drinkable finish.
Tasting Notes: Slightly turbid, but beautifully golden yellow, this wine opens up with a blast of lemons, juicy peaches, pineapple, cider, wild herbs, white flowers and ocean breeze. On the palate it is medium bodied and quite creamy, but with a citrusy acidity and salty minerality keeping it from ever becoming dull.

Tasting Notes: This is a cloudy, aromatic white blend from Austrian wunderkind Matthias Warnung. Spontaneous fermentation, unfiltered, and minimal sulphur addition. It's fresh, but grounded by some of the grapes spending two weeks on skins. This white feels slightly reminiscent of sake, with a hint of saltiness and the usual white fruit and floral notes from the Grüner.

Tasting Notes: Golden yellow color with greenish and amber reflections, the nose hints of pear cider, the palate is quite dry, beautiful acidic structure, scents of herbs, medium-long finish, but powerful.
Tasting Notes: The wine is a mix of incredible freshness of citrus and pears on one side and nutmeg aromas on the other. Pleasantly expressed and pleasant acids. The bubbles are delicate. A completely dry wine, slightly sparkling, which, because of the production technique, has some sediments (yeast residues) at the bottom of the bottle, which can also be gently stirred before opening the bottle. A careful and slow opening of the crown cap is recommended. Completely without added SO2.
