Tasting notes : Super zesty and playful, bursting with citrus (yuzu), tart stone fruit and tangy herbal notes, over a lean, salty backbone. Electric acidity and a bone‑dry, mouthwatering finish. Experimental, zero‑zero cuvée with strong citrus influence; spontaneous ferment, no fining/filtering, no added SO₂.
