Domačija Butul is a small family winery in Manžan, near Koper, in Slovenska Istra (Slovenian Istria). It is run by Tatjana, Mitja and Črt Butul, who farm alongside a working farm stay, keeping the estate rooted in a wider agricultural rhythm rather than viticulture alone. The vineyards sit on marl, flysch soils typical of the region, and are worked without certification but along organic and biodynamic lines.
In the cellar, the Butuls favour a hands off approach: spontaneous fermentation on native yeasts, no temperature control, minimal or no added sulphites, and wines left unfined and unfiltered before bottling. Skin contact features heavily across their whites, giving several cuvées, including Ribca, an orange hue and textured, savoury character. Reds such as Refošk and Boškarin, alongside the skin contact whites, round out a small, characterful range that reflects Istria's rustic, sun baked terroir and a genuinely low intervention philosophy.
