Domaine in Black is the personal project of Lambert Spielmann, a natural-minded winemaker based in St Pierre, Alsace, with vineyards in the nearby commune of Epfig. Before making wine, he worked as a social worker, and his route into wine began through hands-on experience with local growers and winemakers, including Yves Amberg and Christophe Lindenlaub. His approach in the vineyard is low-intervention and biodynamic, with minimal tractor passes, no trimming through the season, and preparations such as 500 and 501 to support vine health. In the cellar, he works gently and largely by gravity, with slow pressing and very little extraction. The wines are known for purity, harmony, and clear fruit expression rather than heaviness or overt manipulation.

His style sits firmly in the natural wine world, but with balance and precision rather than extremity. That makes Domaine in Black a compelling name in contemporary Alsace: expressive, artisanal, and deeply rooted in careful farming.
