Founded by Thomas Pico in 2004 in the village of Courgis, on the left bank of the Serein River, Domaine Pattes Loup has become one of the most distinctive voices in modern Chablis. After returning from his studies in Beaune, Pico took over a portion of his family’s vineyards and immediately converted them to certified organic viticulture—a bold step in a region still dominated by conventional farming.
Crafted with Precision and Patience
Working across 8 hectares of Kimmeridgian limestone and marl, Pico farms by hand, harvests manually, and relies solely on indigenous yeasts. Fermentations are slow and natural, and the wines mature for up to 30 months in a mix of old barrels, concrete eggs, and stainless steel. This patient approach yields wines that are both structured and alive, bridging intensity with purity.
