36-year-old Fabien learned viticulture locally before touring New Zealand, embracing biodynamics with his father Gérald. Now leasing Pierre Fonjallaz’s Calamin-Dézaley parcels, he experiments with extended Chasselas skin contact, muté Garanoir, verjus, and pétillants—earning BioVino medals for “Arlequino” and “O Vin Orange.”
