Pascal Agrapart is a fourth-generation grower in Avize on the Côte des Blancs, running a historic family domaine founded in 1894. He took over in the 1980s, pioneering biodynamic farming across 12ha of old Chardonnay vines in Grand Cru sites like Avize, Cramant, and Oger, using only natural treatments, plowing, and composts—no chemicals since the early days when he was among the first to reject them.
His philosophy centers on terroir transparency: indigenous yeasts, extended lees aging, neutral oak for some cuvées, no fining or filtering, and minimal dosage to let chalk soils shine through with piercing minerality and tension.
