Podere Sottoilnoce: Lambrusco’s Biodynamic Renaissance
Max Brondolo founded Podere Sottoilnoce (“under the walnut tree”) in 2016 in Castelvetro di Modena, Emilia-Romagna, Italy. A first-generation winemaker with Piedmontese roots, he acquired 7ha around a massive walnut tree, practicing biodynamics to revive forgotten indigenous grapes like Uva Tosca (rainbow-skinned), Trebbiano di Spagna, and Lambrusco biotypes (Grasparossa, Sorbara, Fioranese).
Ancestral Sparkling Focus
Hand-harvested grapes ferment spontaneously, then re-ferment in bottle with reserved must—no disgorgement, filtration, or added yeast. Unfiltered pét-nats showcase vibrant fruit, saline tension, and textural depth from clay-limestone soils.
Terroir Revival Mission
Max blends field blends from 60-year-old co-planted vineyards, creating dry, gastronomic sparklers that elevate Lambrusco beyond industrial stereotypes. Labels by artist Denis Riva add playful artistry. Cult status grows among natural wine lovers for joyful, site-specific expressions.
