Weingut In Der Eben is the small biodynamic estate of Urban Plattner, perched on the slopes above the Eisack Valley just north of Bolzano in Alto Adige, Italy. The farm has been in the Plattner family since the early 1980s, and organic farming was established by Urban's father Johannes as early as the 1990s – well before it was fashionable. Urban took the reins in 2011, converting to biodynamics and fundamentally reimagining the wines. Working across just three and a half hectares of glacially shaped soils – volcanic porphyry, moraine, granite and slate – he tends indigenous varieties including Schiava and Roter Malvasier alongside Lagrein and Merlot. In the cellar, patience is everything: wines ferment spontaneously, rest in large old wooden casks for extended periods, and are bottled unfiltered with minimal sulphur. The result is what Plattner simply calls "living wines" – deeply individual, unhurried, and shaped entirely by place.
