Tasting Notes: Dario Princic's Jakot is a white wine macerated in skins made of Friulano grapes from 60 years old vineyards and aged for 30 months in large casks. The nose has aromas of officinal herbs, hay, citrus fruits, candied fruit and ginger. Fresh and sapid on the palate, with unusual delicate tannins and long finish. Wine made as in the past with artisanal methods. Spontaneous fermentation in open wooden vats, with over 20 days of maceration on the skins. Unfiltered. Very little sulfur dioxide added. 30 months in large casks, 3 months in steel.
