Tasting Notes: Grande Waldo is Nikolas' cuvée from Malvasia, Ribolla and Tocai. The grapes come from his warmer vineyards Pradis and Bosc di Sot, which were planted in 1910 and 1960. The grapes are harvested by hand, crushed, not destemmed and then macerated in concrete vats for 3-6 days. After the remaining grapes have been pressed, the wine is transferred to old oak barrels to complete fermentation and mature for at least 11 months. It is then bottled and rests for a further 6 months before release. The wine shows density and concentration. Great dried stone fruit flavours in combination with a spicy and mineral finish.
