La Salada, El Pla del Penedès

About 40 km west of Barcelona, Toni Carbó cultivates around 20 hectares of vines around the small village of Parellada, continuing a family tradition now in its fourth generation. His grandfather worked at the estate "La Salada" and laid the foundation for today’s winery by gradually purchasing plots—then considered of little value—through his hard work as a contract winemaker. He focused mainly on shady sites along the river and particularly barren limestone plots, including what is now the iconic La Buffarella vineyard, home to ancient Xarello vines.
Many of La Salada's vineyards are now over 80 years old and are dominated by indigenous varieties such as Macabeu, Xarello, Sumoll, and Malvasia de Sitges. Toni tends his vines with uncompromising care and foresight, always completely avoiding the use of chemicals. In the older vineyards especially, he cultivates different grains between the vine rows to supply the soil with the necessary nitrogen.
Toni is held in the highest regard among winemakers. In addition to his wines, he is admired for his uncompromising break with the local Cava industry and his pioneering role as an independent winemaker. Many importers and winemakers share our view that the La Salada cuvées from these old vines are among the most exciting wines in the Mediterranean region.
