Biodynamic Principles at the Core
Gindl’s dedication to biodynamic farming began with his certification in 2010. He believes that working with animals helps restore balance to the land. His 30 Scottish Highland cattle provide manure, 20 Breton dwarf sheep graze the vineyards, and horses assist with mowing and spraying, minimizing soil compaction and reducing the need for tractors. His approach enhances biodiversity and soil vitality, ensuring his wines reflect ecological harmony.
Innovative Winemaking Techniques
Michael Gindl employs spontaneous fermentation with natural yeasts and minimal intervention, allowing his wines to develop their true character. His "Little Buteo" series, named after local buzzards, symbolizes the harmony between nature and winemaking. Gindl was also one of the first in Austria to use acacia barrels for aging, enhancing the delicacy of wines like Grüner Veltliner.
