Sylvain Pataille: Champion of Marsannay and Aligoté

Sylvain Pataille is a renowned winemaker based in Marsannay-la-Côte, located at the northern end of Burgundy’s Côte de Nuits. Since establishing his own domaine in 1999, Sylvain has grown his vineyard holdings to 15 hectares, all certified organic by Ecocert since 2008 and managed using biodynamic methods.

Dedication to Terroir and Biodiversity
Pataille's commitment to biodynamic practices involves very low yields, ploughing by horse, and fostering vineyard biodiversity. His vineyards produce a range of varietals, including Pinot Noir, Chardonnay, and Aligoté. Sylvain is particularly noted for his work with Aligoté, producing several single-vineyard cuvées that have elevated this often-overlooked grape to new heights.

Natural Winemaking Philosophy
Sylvain's winemaking philosophy is rooted in natural processes. He employs ambient yeast fermentation and minimizes the use of sulfur, adding it only at bottling if necessary. His vinification involves long macerations and aging in a mix of stainless steel, fiberglass, and oak barrels, with the wines often spending 15 to 18 months or more in barrel, depending on the needs of the vintage. This approach results in wines that are balanced, with seamless textures and a clear expression of the Marsannay terroir.
