Tasting Notes: Caramel, honey, bitter orange marmalade and Earl Grey tea. The grapes were partly de-stemmed and ferment in 1000L tanks for a twelve weeks with occasional push downs to slowly extract the tannins in the skins. After pressing the fermenting juice is transferred into small used barrels to age for a minimum of 2 years. Throughout that period there is no topping up or any kind of filtration or fining and all wines at Mythopia are being bottled without the addition of sulphur.
Tasting Notes: Bright yellow to amber colour. Intense nose with emerging aromas of thyme, lavender, oregano and ginger.Herbal and vegetal notes in the palate, with an intensive expression of bergamot and kumquat along with resin and thyme. Tasting Notes: The grapes are de-stemmed and placed in 30 hl truncated conical oak vats where they remain for about twenty days during which part of the spontaneous fermentation takes place in contact with the skins, without controlling the temperature. This is why this wine will have a lot of character and can be classified as a ‘skin contact’ wine. 3-4 manual punch downs a day are carried out as needed. After racking, aging takes place in 700 l tonneaux, for about 8 months and then 2 months in bottles.
We do not carry out any clarification and filtration or addition of sulfites

Tasting Notes: Medium deep orange-amber color. The bouquet is more intense, aromatic than befits Pinot Gris. Spicy notes predominate over ripe red fruits, a note of freshly ground coffee creeps in, ripe red apples. Variegated! Dry mouth, medium body, higher acids, tannin grip is very boldly set and can also flirt with some red wines. It is also spicy in the mouth, and above all, the wine has an abundance of structure. Medium-bodied, with a surprisingly moderate alcohol level depending on the variety, the origin and also the (strong) style of the house, which, however, really calms down. At the moment, the tannins are a little rough, but the wine can travel nicely into the future.
