The grapes were partly de-stemmed and ferment in 1000L tanks for a twelve weeks with occasional push downs to slowly extract the tannins in the skins. After pressing the fermenting juice is transferred into small used barrels to age for a minimum of 2 years. Throughout that period there is no topping up or any kind of filtration or fining and all wines at Mythopia are being bottled without the addition of sulphur.

Tasting Notes: The ripe grapes are picked on fruit and flower days, whenever possible, only by women to maintain their fertile energy. All viticulture is geared towards producing a peaceful, symbiotic balance between all living entities. Vinification takes place in a combination of amphoras and enameled tanks to preserve the juice as good as possible. Only indigenous yeasts are used for fermentation and malolactic fermentation occurs naturally. Minimal or no Sulphur is added. The wines are disgorged 22 months after harvest.
The Cuvée Coeur Saphyr is a very special champagne. This is the only 100% meunier champagne from Augustin Champagnes. The champagne is vinified with a Saphyr in the amphora and carries an incredible energy.

Tasting Notes: The first vintage of this single-vineyard wine, grown at 700 meters above the sea on Monte Portella with northern exposure. Due to the quality of the vintage pressed for the first time. Arenaria is a mineral rich sandstone formation with marl, quartz and light clay. Here Eduardo leaves the volcanic soil into an area which among the locals is called the "White Land." Planted with 90% Nerello Mascalese and 10% other local varieties, some of which are over 70 years old. 20 days without Temperature control in concrete vats carefully macerated and fermented. Further aging for 11 months in 500 and 600 liter tonneau, as well as concrete vats. A Nerello with a lot of depth and complexity that will still need some time. will need some time. Very angular, fresh, tart and some tannin. The red-fruited, mineral nose is promising and shows the potential of this terroir wine.

Tasting Notes: Pirrera is a site located at 850 meters, once overgrown with Nerello Masacelese and 10% local varieties that Eduardo has re-cultivated. The name of the Contrada comes from a historic quarry dating back to 1614, whose stones can be found here. The vines are on average 50 years old. Fermented spontaneously, partially with stems and stalks and without temperature control in concrete barrels, it was then aged for 16 months in a 2500 liter Slavonian oak barrel. In this wine you can feel even more lightness and finesse, especially the cool freshness of the high altitude.
