Tasting Notes: No destemming and maceration of the grapes with a submerged cap. Only native yeasts for fermentation. No use of SO2 before setting.
Aging in large vats and 600 liter oak barrels called in the Rhone valley ‘Demi-Muid’, on fine lees for 14 to 18 months. Bottling without fining or filtration.
Taste characteristics: This cold climate Syrah gives notes of violet, blackcurrant leaves and sometimes very intense black olives. The balance is acid / tannin during the first few years, rounding off with 2 to 3 years of aging.
Very "wild" wine with a strong personality. Rustic and rounded cuisine during its youth. Game on evolution.
