Tasting Notes: Manca del Rosso is made from 100% Magliocco grapes that are hand-harvested, double sorted, de-stemmed and then gently pressed. The free run juice goes into concrete vats, where it stays for 6 months. In the meantime, the lees sink to the bottom of the tank, leaving it quite clear when it is bottled. This dark rosé has no added sulphites. Clear with a translucent and cherry-red color in the glass. It smells of wild flowers, grapefruit, and amarena cherries, with a bit of smoke and Mediterranean brush in the background. On the palate it is super juicy, slightly salty and has a lovely zesty acidity.

Tasting Notes: “Mutabilis” is a rosé wine; the name comes from an ancient Chinese rose called Mutabilis Chinensis. After the winemakers experimented with different blends for a few years, they decided to make this wine with 100% Freisa, as this was the grape variety that gave us the best expression of a rosé wine in their terroir.
The grapes after harvest macerate for about 2 hours and then are pressed for fermentation. Affinage takes place in stainless steel for 10 months and then an additional 4 months in bottle before release.
